Sweet & Simple Summer Pudding Recipes

6 simple summer pudding recipes to enjoy. There’s always room for something sweet, but when the sun is out, the last thing anyone wants to do is spend hours in a hot kitchen. Whether you’re prepping for a garden party or taking a dish to a friend’s barbecue, we’ve collated the best quick and simple, no-bake dessert recipes perfect for summer.

Blackberry Eton Mess

Great for making the most of these foraged fruits in late summer. The full recipe uses homemade meringues, but to beat the kitchen heat, good-quality shop bought ones would work just as well!

You’ll need: blackberries, caster sugar, lemon juice, water, double cream & meringues. Full recipe in this previous journal post. 

Serve in: Meadow Tumblers. Robust for garden dining with a summery design. 

Rhubarb Gin Sorbet

A sweet sorbet with a little fizz to it. Best with homegrown rhubarb!

You’ll need: rhubarb, lemon juice, caster sugar and your favourite gin.

Chop and weigh your rhubarb and add to a saucepan with a squeeze of lemon juice, sugar and a dash of water. Use about half the weight of the fruit for the sugar, and enough water to cover the bottom of the pan. Gently cook until really soft then mix in a couple of tablespoons of gin to taste. Leave to cool, then pour into a container and freeze. You’ll need to whisk it every half hour so it freezes smoothly.

Serve in: Silver Birch Bowls. The perfect size for a perfect scoop!

English Strawberries

You can’t beat in-season English strawberries. Especially homegrown or bought from a local farmers market. Jazz them up with a garnish and fresh cream, or go retro with jelly too!

You’ll need: strawberries, cream or ice cream, a herby garnish (mint is classic but Bottlegreen Drinks’ suggestion of pistachios also sounds amazing)

Serve in:Floral Twist Jug for pouring your cream. 

Summer Fruit Fool

Emma’s mum, Ann, is a fabulous host and this clotted cream fool is her go-to. Made with sharp blackberries, although gooseberries would be a great alternative. 

You’ll need: blackberries, sugar (or cordial, elderflower is particularly good) & clotted cream

Stew the fruit in a saucepan with sugar or a glug of cordial to taste. Once softened, leave to cool. Gently whip up the cream then fold through 3/4 of the fruit. Serve with a spoonful of the remaining fruit on top.

Serve in: Silver Birch Bowls

Cheat’s Trifle

We originally posted this at Christmas, but it could easily be whipped up for a summer pudding. Make in individual portions for less washing up!

You’ll need: shop-bought Madeira sponge cake, raspberry jam, sherry or brandy (or limoncello would be a delicious summer twist), raspberries, fresh custard, double cream. See the full recipe here.

Cherries & Ice Cream

A retro sweet treat that’s perfect for summer. Helen’s mum used to make this, and now so does she!

You’ll need: tinned cherries, brandy & ice cream

Simply heat the cherries in a saucepan with a splash of brandy and spoon over cold ice cream.
